Double Chocolate Pizzelle

These crispy cookies are perfect at the end of a meal when you have no room for dessert. I love serving cookies for this reason, because they’re not “a commitment” the way a slice of cake can be. Light and chocolatey, these pizzelle are a bit of a departure from traditional vanilla pizzelle, but they are delicious. Cuisinart makes a Pizzelle Press that makes these super easy to make. Dust them with powdered sugar, or use them to make ice cream sandwiches.

Description
Light and chocolatey, these may be a little untraditional, but they are delicious. Cuisinart makes a Pizzelle Press that makes these super easy to make. Dust them with powdered sugar, or use them to make ice cream sandwiches.
Ingredients
1 1/2 cups all purpose flour
1/4 cup unsweetened cocoa powder
2 oz. very finely chopped bittersweet or semisweet chocolate
2 teaspoons baking powder
3 large eggs
1 cup sugar
1/2 cup unsalted butter, melted
1 tablespoon vanilla
Confectioner’s sugar for dusting
Instructions
1. Preheat the pizzelle press on the medium setting. Using a pastry brush, brush a little melted butter on the top and bottom plates of the press.
2. In a small bowl, mix flour, cocoa, chopped chocolate and baking powder with a whisk to combine.
3. In a mixer or large bowl, add eggs and sugar and mix on medium speed for 1 minute until thickened.
4. On low speed, add the vanilla and melted butter in a steady stream and mix until just combined.
5. Add the flour mixture until just combined.
6. Drop about 2 teaspoons of batter on each of the patterned cookie grids. Close and lock the lid. The light will turn red. The pizzelles should be done when the light turns green.
7. Using a silicone or nylon spatula, remove each pizzelle and place on a cooling rack, stacking them as they cool.
8. Dust with confectioner’s sugar before serving, or sandwich your favorite ice cream between two pizzelle for an awesome summer treat!
Notes
Special equipment: Pizzelle press
A cookie dough scoop is really helpful when making these, to minimize mess and get a consistent amount of batter on the press each time.
